Southern Turnip Greens

Last week, I first made my southern turnip greens.  It tasted good but I prefer my way of cooking turnip greens as I want my greens not to be overcooked.

This recipe calls for the turnip greens to be simmered for an hour or so.  It really tasted so good as you can taste the flavorings of the ham hocks.

Ingredients:
turnip greens, chopped
smoked ham hocks
water
black pepper
salt

Directions:

  • Boil ham hocks in water.  When it is tender and water is almost half gone, add turnips.
  • Bring to boil and simmer for an hour or so
  • Season with salt and pepper
  • Serve

Ham and Broccoli

I made this dish last week.  For some reasons, I was so hungry and craving for some Filipino goodness but I didn't have rice in my rice bin.  It was already 3 days since I last had rice and I had a strong craving for rice and some sardines.

I rummaged my fridge and found a frozen ham.  I thawed it and stir fry some broccoli florets with it.  Amazingly this was really good.

Ingredients:
sliced left over ham
broccoli
red onion
black pepper
cajun seasoning
balsamic vinegar

Directions:

  • Saute ham and add onions.
  • Add  broccoli and season with black pepper, cajun seasoning and balsamic vinegar.
  • Cook for 1 minute
  • Serve
Note: I prefer my veggie half cooked.

Steam and Serve

I can be lazy at times. Thanks to the frozen veggies that are available in any grocery stores.

When I don't feel like cooking, I just grab one of those steam and serve veggies. All I need to do is put this on the microwave.  Pictsweet Steam'ables is one of my favorites.

This Asian vegetables with Oriental Seasoning is just enough to make me full.  I eat the whole bag as my lunch today.  It was good for 3 1/2 serving but the Carb content is just 5g per serving.  I was still good with my 45g of carb allowed per meal as the whole pack only contains 18g of carbs.

Stir Fry Beans

I had a hard time finding a fresh green beans in the grocery store. Most of the time, it is no longer fresh and it shows that they are already wilted.

Last week, my MIL found fresh ones in Walmart Pell City. She was excited to buy it for me. Little did she knew that I was looking for it because I wanted to cook it for her and Dan. So when she gave it to me, I cooked it for her to take home.

We love our stir fry beans without meat on it. Just plain stir fry beans. Crunchy and delicious!

Asian Eggplant

I love "tortang talong" so when we went to the Asian store I bought some Asian eggplant. I don't like making "tortang talong" from the eggplant in local grocery stores because they are to big and too watery.

I poke some holes in the eggplant before I broil it in the oven. After broiling it, I peel it and mashed. I then dipped it to the mixture of egg and flour which was seasoned with garlic salt and pepper. Then I fried it and viola I got me a very delicious "tortang talong"
