Asian Eggplant

I love "tortang talong" so when we went to the Asian store I bought some Asian eggplant. I don't like making "tortang talong" from the eggplant in local grocery stores because they are to big and too watery.

I poke some holes in the eggplant before I broil it in the oven. After broiling it, I peel it and mashed. I then dipped it to the mixture of egg and flour which was seasoned with garlic salt and pepper. Then I fried it and viola I got me a very delicious "tortang talong"

wala man ko ka kita ana nga talong dire sa local grocery store woi...talong dire mura man ug kapayas...waaaaa!
