Smashed Potato

This recipe is something I found online. It seems that it is a lot of work to do but I just wanted to try since hubby likes to eat potato.

Ingredients:
Potato
Salt
Olive Oil

Directions:

Boil potato until tender. Dry it in a paper towel and smashed them.

Place it in a baking pan lined with aluminum foil. Season with salt and olive oil

Bake it until crispy and golden brown. Serve.

Well, hubby liked it but he said that it will be better if there's ketchup to eat it with. Personally, I like it but it is just take too much time to make it.

Roasted Pork Loin and Vegetables

This is a very simple yet delicious and nutritious meal. We had this the other night as our dinner. What I like about this dish is already complete. I don't need to prepare anything else because it already has meat and vegetables.

Ingredients:
Boneless pork loin
garlic salt
pepper
dried parsley
dried thyme
potatoes
carrots
olive oil

Directions:
  • Season pork loin with garlic salt, pepper, dried thyme and sizzle with olive oil.
  • Put in a roasting pan and baked for 45 minutes at 350F
  • While roasting the pork loin, bring the carrots and potatoes to boil until half cook.
  • Drain. Season with garlic salt, pepper, dried parsley and sizzle with olive oil.
  • Add the seasoned vegetables to the pork loin. Bake until veggies and pork loin is done.
  • Serve

Homemade Fries

I always prefer my homemade fries than the ready to cook fries in the frozen section of the grocery store. I thought that this is healthier.

Ingredients:
4 small pieces of potato
salt
pepper
olive oil
cooking spray

Directions:

Peel the potato and wash. Cut in half (lengthwise) and then cut the half in 4 slices. (I always prefer a thicker fries). Spray the pan with cooking spray. Arrange the potato. Season with salt and pepper. Drizzle with a little olive oil. Bake in 350F until golden brown.

Serve and dip in a lot of catsup!

Roasted Potatoes

This recipe is one that I would like to cook again. This is the first time that I made this and I love its outcome. The potatoes are so creamy and crunchy.

Ingredients:
2 potatoes
2 sweet potatoes
salt
pepper
olive oil
dried tarragon

Directions:

Peel the potatoes and cut in cubes. Put in a pan with enough lightly salted water to cover them. Bring to boil and cook for 3 minutes. Drain thoroughly.

Spread in the non stick baking sheet. Drizzle with olive oil and season with salt, pepper, and tarragon. Bake in 350F until golden brown.
Transfer to a bowl and serve.
