Baked Spaghetti

Since I got here in the USA, I never had baked spaghetti. Last night, I decided to make one. I love Filipino spaghetti... it is sweet... and yummy! I also learned to appreciate pure italian spaghetti. But still, I always prefer the filipino taste. For this recipe I made a cheesy spag.

Ingredients:
Spaghetti noodles (cooked as directed)

Ground pork
Filipino Sweet style spaghetti sauce
garlic
black pepper
ricotta cheese
mozzarella cheese
cheddar cheese
milk

Direction:
  • Brown ground pork. Season with garlic and pepper.
  • Add the spaghetti sauce and cheese (ricotta, mozzarella, and cheddar)
  • Mix it with milk
  • Stir and bring to boil. Set aside
  • Put noodles in the oven safe casserole. Add enough sauce and top with mozarella and cheddar cheese.
  • Bake at 350F until cheese melts and brownish
  • Serve
The finish product!

Pancit Palabok

Pancit Palabok is one of my favorites. This dish requires a lot of effort but it is worth it. I always remember when we go to Jollibee I always order pancit palabok. As I promised, I am posting here a nice and yummy food in celebration of my PR (hehehe).

Ingredients:
Rice noodles

garlic
ground pork
shrimp
squid
palabok mix
ground pork rinds

For garnishing:
ground pork rinds
shrimp (cooked, whole)
cooked eggs (slice)
spring onion (chopped)

Directions:
  • Cook rice noodles (al dente). Set aside
  • Prepare the sauce. Saute garlic. Add ground pork and cook until brown. Add squid and shrimp. Season with palabok mix. Add half of the ground pork rinds.
  • Add rice noodles to the sauce. Mix thoroughly.
  • Garnish with sliced eggs, shrimp, spring onions and ground pork rinds.

Note: There is no available "tinapa" in our place. In place of the "tinapa" is the ground pork. I wish there is kalamansi here too. In place of kalamansi a zest of lemon or lime will do.

Pansit

I decided to cook pansit. I remember how good the pansit especially when you squeezed a bit of kalamansi in it. Too bad though, there is no kalamansi here. Although there is lemon and lime, still kalamansi is incomparable when it comes to pansit.

Ingredients:
Sotanghon
pork (slice in small strips, i use pork with fats in it)
garlic
onion
carrot sticks
green beans
soy sauce
pepper
oil
chicken broth

Directions:

1. Soak the sotanghon in a lukewarm water. Drain and reserve.

2. Cook pork until brown and the lard comes out (Remove extra lard if there is more than enough).

3. Put the pork at the side of the skillet and sautee garlic and onion. Mix it with the pork and season with soy sauce and pepper. Add green beans and chicken broth and cook until almost ready. Add carrots and cook until ready. Remove the vegetable - pork mixture. Leave the sauce. Set aside. Add the sotanghon and cook it with the remaining sauce. When sotanghon is ready, return the vegetables and mixed well. Add more pepper if necessary.
