I have been craving for Bicol Express for sometime now. I just didn't know how to cook it. I remember when I was working in Manila, Bicol Express is an everyday menu in the carenderia near our office. It has been so long ago since I have eaten bicol express that is why I decided to cook my own version of bicol express.
Ingredients:
1lb pork ( the more fats the better)
1 small can coconut milk
2tbsp salted shrimp fry (bagoong alamang)
jalapeno peppers (sliced)
garlic
onion
pepper
Directions:
Heat the skillet and add the pork. Cook until lightly brown and the fats come out. Remove some of the oil from the fats. Set aside the pork. Sautee garlic and onion and mix together. Add jalapeno and coconut milk. Add salted shrimp fry and seasoned with pepper. Bring to boil and simmer for 5 minutes. Serve with rice...
