When I was young, Tatay used to fish in the river few miles away from our home. He caught tilapia all the time.... very small tilapia though. It would be a lucky day if he would caught as big as my three fingers combined. I remember those days, on how we would divide the bigger tilapia.
Looking at the tilapia in the grocery store, which weighs more than a pound each, it makes me smile remembering the old days and the story of tatay's fishing.
Anyway, I cooked tilapia in coconut milk which both Andrea and myself enjoyed eating. I tried to feed Andrea as much Filipino food as I can that way she will be used to it, that way I have somebody to eat with my filipino dishes.
Ingredients:
2pc tilapia ( cut in half)
2pc tilapia ( cut in half)
half can coconut milk
salt
vinegar
black pepper
garlic
onion
ginger
red tomatoes (cut in wedges)
Directions:
Clean the fish thoroughly and put in a cooking pan. Add tomatoes, garlic, onion, ginger, vinegar and coconut milk. Season with salt and black pepper. Bring to boil. Simmer until fish is cooked.
Serve.

This looks good. I'm probably one of the few Filipinos who do not make Filipino dishes. I learned to cook in the states.
i cook variety of dishes. being a full time mom and wife gives me a lot of time to cook, besides, i really enjoy cooking!
