Pork Adobo with Pineapple


I wanted a twist to my pork adobo thus I decided to add some pineapple chunks.  It turned out really tasty and very delicious.

Ingredients:
Pork cubes
Soy sauce
Salt
Peppercorns
Laurel
Garlic
Onion
Pineapple chunks (juice included)

Directions:

  • Brown pork.  Remove extra lard. Set aside
  • Sautee garlic and onion.  Add pork.  Season with soysauce, salt, pepper, laurel leaves.
  • Simmer until pork is tender.
  • Add pineapple.  Simmer more.
  • When most of the liquid has evaporated, it is then ready to serve.
