Slow-cooked Pork Tacos

Citi Field, the Shea Stadium replacement and home of the New York Mets, has added a great new baseball experience to Queens, NY. This venue is much more than just a stadium, it is home to some of the best baseball stadium food in the country with such non-standard stadium grub such as crab sandwiches, Kansas City-style Ribs and my favorite, slow-cooked pork tacos. I have tasted these tacos on many occasions and have put together a quick recipe for you to re-create these gems at home.

Ingredient List:

Core Ingredients

  • Boneless pork loins

  • Corn tortillas

  • 1 Onion

  • 1 Clover garlic


Dry Rub

  • Salt

  • Pepper

  • Chile Powder

  • Garlic Powder

  • Onion Powder

  • Cayenne pepper

  • Paprika


Braising Liquid

  • Can of tomato sauce

  • Mustard

  • Ketchup (optional)

  • Hot sauce (optional)

  • Water (as needed)

  • Paprika

  • Olive oil


Cooking Instructions

  1. Apply the dry rub ingredients to the meat and brown both side over olive oil in a medium heat pan

  2. Remove from the pan for now

  3. Add the onion, chopped to your liking and season with salt, pepper and paprika

  4. Add chopped garlic.

  5. Add back the pork

  6. Deglaze pan with tomato sauce or water, to just about cover the meat

  7. Add the remainder of the braising liquid ingredients

  8. Cover and reduce to low-medium heat, cook for 1-2 hours

  9. Chop/pull to your liking and place on the corn tortillas with extras of your choosing.
