Pork Menudo

Pork menudo is a Filipino dish that often served in parties. This can also be your day to day dish. Pork menudo recipe varies from places to places. Each recipe has added ingredients. What is common to all the variations is the fact that it all uses tomato sauce. So, whatever extra ingredients it has, menudo has always the distinct taste of veggies and pork in tomato sauce.

For this menudo, I just made it simple and easy.

Ingredients:
Pork (cut in small cubes)
potatoes and carrots, peeled and cut in small cubes then fried
onion, diced
tomato, diced
small can tomato sauce
red bell pepper, diced
green bell pepper, diced
garlic, minced
soy sauce
cooking oil or olive oil
1 cup water or 1 cup pork or chicken stock
salt and pepper

Directions:
  • Saute garlic and onion.
  • Add the pork, tomatoes, soy sauce, tomato sauce, and water or stock. Season with salt and pepper.
  • Cover and bring to a boil. Simmer for 20 minutes or until pork is tender.
  • Add the potatoes, carrots and bell peppers. Boil for another 2 minutes.
  • Add some more salt and pepper to taste.
  • Serve
